What to cook with chicken thighs.

Chicken thighs are the most forgiving protein in the kitchen. They don't dry out like breasts. They're cheaper. They take any seasoning. They survive overcooking by 10 minutes and still taste fine. If you bought a pack of thighs and don't know what to do with them, you have more options than you think.

Here are 12 reliable dishes — almost all under 45 minutes, almost all using pantry staples you already have. Sorted by technique so you can pick by what's easiest tonight.

Pan-seared (15–20 min)

1Crispy-skin pan-seared thighs

15 min · 1 pan

Pat the skin dry. Salt heavily. Place skin-down in a cold cast-iron pan. Heat to medium. Don't move them for 10 minutes. Flip, cook 5 more, done. The slow-warm trick renders the fat instead of burning it. The most underrated cooking technique in the home kitchen.

2Lemon-pepper thighs with crisp shallots

20 min · 1 pan

Sear thighs as above. Remove. Add sliced shallots to the rendered fat, brown 4 minutes. Squeeze a whole lemon over everything. Serve with bread to mop the pan.

3Soy garlic glaze thighs

18 min · 1 pan

Mix 3 tbsp soy sauce + 2 tbsp honey + 2 grated garlic cloves. Sear thighs skin-down (10 min). Flip, pour glaze in, simmer 5 min until syrupy. Eat over rice.

Sheet pan (35–45 min)

4Sheet pan thighs and root veg

40 min · 1 pan

Quartered potatoes, halved carrots, an onion in wedges. Toss with olive oil, salt, pepper, rosemary. Lay thighs on top. 425°F for 35 min. The veg cooks in chicken fat. Done.

5Honey-mustard sheet pan

40 min · 1 pan

Same as above, but coat thighs in 3 tbsp dijon + 2 tbsp honey + a pinch of salt before baking. The mustard goes nutty in the oven.

6Lemon-garlic-paprika thighs

35 min · 1 pan

Mix smoked paprika + garlic powder + lemon zest + olive oil + salt. Rub on thighs. Bake 425°F for 30 min. Squeeze fresh lemon over before serving.

Braised (1 hour)

7Tomato-braised thighs

1 hr · dutch oven

Sear thighs, remove. Sweat an onion + 4 garlic cloves. Add a 28oz can of tomatoes, oregano, salt. Nestle thighs back in. Cover, simmer 45 min. Sauce reduces, meat falls apart. Serve over polenta or pasta.

8Coq au vin (the easy version)

1 hr · dutch oven

Sear thighs in bacon fat (cook 4 strips first, save them for crumbling on top). Add a chopped onion + 8oz mushrooms + 3 cloves garlic + 2 cups red wine + 1 cup chicken stock + thyme. Simmer 45 min covered, 15 min uncovered. Crumble bacon on top.

9Coconut curry thighs

35 min · 1 pan

Sweat onion + ginger + 2 tbsp curry paste (any color). Add a can of coconut milk, juice of one lime. Simmer thighs 25 min. Throw in any wilting greens for the last 3 min. Eat over rice.

Slow / hands-off

10Slow-cooker shredded chicken

4-6 hr low · slow cooker

Thighs + a jar of salsa + 1 tsp cumin. Six hours on low. Shred with two forks. Tacos, burrito bowls, sandwiches, on top of salads for a week.

11Brown butter sage thighs

25 min · 1 pan

Sear thighs as before. Remove. Reduce heat. Add 4 tbsp butter and 8 sage leaves. When the butter foams and turns brown (about 90 sec), kill the heat. Pour the brown butter over the thighs.

Pressure cooker / Instant Pot

1215-minute chicken & rice

15 min cook + 10 min rest · pressure cooker

2 cups rice + 3 cups stock + thighs + a halved onion + bay leaf. Pressure cook 12 min, natural release 10 min. Stir, salt, eat. Brimm-tested formula for "I have nothing planned and people are hungry."
